First day of a 4-day set. I had porridge for breakfast and the usual shrimp salad for lunch. I wasn't especially busy but a couple of the folks I know stopped by to chat and suddenly it was 6 pm. I didn't even miss my yogurt, so I brought it and my chicken left-overs home to eat tonight. I have no idea if there was even anything on the snack table, because I never went near it. Now that's success!
Last night I took the 4 boneless, skinless chicken breasts I picked up at the butcher in Ripley, laid them out in a roasting pan, sprinkled them with salt and pepper and baked (roasted?) at 350F for about 1/2 hour. While they were roasting, I made a package of Chicken Stovetop Stuffing and steamed some veggies. I divided all this up between 4 boxes and--voila! 4 nights of dinners. I had the first one tonight and I have to say, sometimes simpler is better. It was pretty darn tasty!
I think I'll put on my jammies early so I can watch a bit of TV while my cake bakes and do some laundry before it's bedtime. It's a tough life, but somebody's got to do it...
