I've been a bad blogger! I'm not doing a good job of keeping up with this when I'm on graves. Tuesday and Wednesday were both pretty boring--hence no entry--but I'll try harder.
Both days it was the usual porridge for brekkie and salad for lunch, then Tuesday I had a baked potato with steamed brocolli, salad and queso and Wednesday I had a small steak with mushroom gravy, noodles and steamed veggie.
The steak was a recipe I got off the Swanson web-site and made a few changes:
Pan-Seared Steak with Mushroom Gravy
Sirloin Steak (1 lb), cut into 4, 4-oz portions (I used tenderloin fillets since I'm not a big sirloin fan)
1 T unsalted butter
2 cups (about 6 oz) sliced small mushrooms
1 shallot, sliced
3 cloves garlic, minced
1 T flour
1 c beef stock
Heat a non-stick skillet over medium-high heat. Season steaks as desired. Sear steaks on both sides until desired doneness; remove from pan and keep warm. Melt butter in skillet (do not drain any fat that might be there). Add mushrooms, shallots and garlic and saute until tender. Add flour and cook 1 minute. Gradually add stock, stirring to avoid lumps. Bring to a boil and cook a few minutes until hot and bubbly. Serve gravy with steaks. Makes 4 servings, 177 cal per serving. This was really good with egg noodles and steamed veggies.
