Today started out like a carbon copy of the past 2 days (porridge for brekkie), but I decided to change it up a bit. I made a tomato, mozzarella and basil salad with a twist for lunch. Washed and halved some cherry tomatoes, drained and halved 2 150g tubs of boccocchini (and I've got to learn how to spell this word; basically bite-sized fresh mozzarella balls), chiffonaded (another word I need to learn to spell!) a pack of fresh basil and put it all in a large bowl. Added a lot of freshly ground black pepper and set it on the snack table with a bottle of balsamic viniagrette for people to salt and dress as desired. I had that for lunch. I'm still not a big fan of tomato skins, but I'm getting used to them. The flavors were awesome! I think it was fairly popular.
Anyway, I had that around noon and then my regular shrimp tossed salad around 5, so I gave the baked potato a miss and just had my raspberries and orange yogurt when I got home. I had 3 l of my citrus water at work and 2 cups of black coffee; I think I need to drink another big glass of water before bedtime.
I'm doing a load of laundry right now. Once it's finished washing and I toss it in the dryer, I'm off to bed. Tomorrow I'm off to Edinburgh and the Impressionist Gardens exhibit.
